Aluminum Serving
Cooking for 100 people?
I'm throwing a surprise party for my parents and was looking at catering prices and they're very high, so I've decided to do all the cooking myself. I wanted to have some marinated boneless/skinless chicken breasts to go along with the pasta and salad which are already taken care of, but I'm unsure of the best (and safest) way to cook the chicken. I will have access to a convection oven and was thinking of just marinating them and baking them in those aluminum serving trays that go into warming trays but i'm not totally sure. Please help me out!!
That is fine. Just invest in a meat thermometer. Chicken and pork should be 165* and beef is always 155* to insure it is cooked. Make sure you rotate the chicken halfway during cooking to insure it is even. If you cover it, it will be nice and moist. Put the chicken and the marinade all in the pan together. For the last 15 mins. drain and continue the cooking cycle.
